Citrus sudachi

A Japanese lime with a bright and acidic juice that is a perfect addition to dishes like udon, soba and fish. It is a small green fruit that will ripen to a yellow if left on the tree. 

Position: Full sun, does best without root competition so give it space in the garden to grow

Size & Habit: 5m x 3m, can be pruned to keep the tree small and easy to harvest.

Flower: White, star-shaped

Fruit: Petite and green, roughly the size of a golf ball, tangy, sharp taste, intensely aromatic. 

Skin: Thin, slightly bumpy, rough and tart

Cropping: February to May

Harvest/Maturity: 1-3 years after planting

Pollination: Self-Pollinating

Uses: Fresh and cooked, jams, preserves, Japanese dishes, garnishes, drinks, desserts, zest
