Also known as Ravensthorpe radish, the Youlk is a perennial plant native to WA, and grows well in sandy, dry conditions. For best results however, grow in sandy or loamy soil and water well through summer.
The Youlk has a crisp, apple-like texture and its flavour has hints of carrot and eucalypt. Delicious roasted, baked or fried, or as an ingredient in salads, stews, cakes or pies.
Harvest year-round by digging down around the plant and removing the largest tubers. Ideally, harvest the tubers when they are young, before they become too large and pithy.
