A large leaved biennial producing a starchy corm that is a staple in many cuisines around the world. It must be cooked before it is eaten due to oxalates contained in the plant when it is raw.

Position: Open, sunny spot in moist soil. 

Uses: Dominant in tropical cuisines, mild nutty flavour that pairs well with coconut, lime, ginger, garlic, onion, and sesame when used in savory dishes. It can also be used in sweet dishes when cooked with sugar or other sweeteners.
