Allium ampeloprasum – ‘Giant Elephant’ syn ‘Russian Garlic’

Closely related to leek, elephant garlic produces very large bulbs 8-15cm across, with white skin and 2 to 5 cloves each. Cloves are large with tan skin and a mild flavour between true garlic and leek. Cloves are easy to peel and can be roasted whole, sliced and added to salads, or used as an onion/garlic substitute. Also known as ‘Russian Garlic’.
Plant in Autumn, harvest in very late Spring/Summer
Separate cloves and plant individually approximately 30cm apart, pointy end up to produce an abundant crop. Cease watering a few weeks prior to harvest to ensure plants become dry and firm before lifting. Once the foliage has died back, lift and store in a cool, dry environment.
