Jerusalem Artichoke is a perennial species of sunflower native to central North America. The tuber of the plant is used thinly sliced in salad, pureed as a delicately flavoured soup and as a delicious roasted vegetable with rosemary and garlic. 

Position: Prefers full sun. Suitable for all climates. Frost Hardy

Height: 2m

Width: Casts a lot of shade

Harvest: 4-5 monthsfrom planting

Care Tips: For the best quality tubers, nip out the flower heads at budding stage. Cut all flower stems close to the ground before harvesting tubers. Ready for harvest after flowers and stems have died off. Tubers not harvested will produce even more plants the folowing year.
