The Jerusalem Artichoke is actually a perennial tuberous sunflower and not a true artichoke. It produces tall elegant yellow flowers and upright green foliage that die down to help form delicious earthy tubers in late autumn to winter. 

Position: Full sun, prefers soil enriched with organic matter. 

Uses: Can be peeled, sliced and added to salad. Delicate flavour and creamy colour are beautiful in a pureed soup. Delicious roasted.
