A hardy biennial herb with broad, hairy foliage and reddish purple flowers with green hooked bracts. It has long roots that are a good source of fibre and nutritious. 

Position: Grows well in full sun or light shade.

Flower: Reddish purple, mid-summer

Foliage: Large, deep green

Size: 1.5m H x 1m W

Uses: Roots are able to be cooked, eaten raw or dried into a powder. Foliage and flowers are also able to be steamed and eaten as a vegetable.
