Chicory or Witloof is a white leaf vegetable with a crisp, firm compact head. The leaves are creamy coloured with pale yellow tips. Radicchio is the red-leafed form of Witloof. 

Position: Full sun with moist soil

Uses: Leaves have a slightly bitter, nutty flavour that can be used fresh with oranges in winter salads or lightly cooked with butter and mixed herbs. Remove bitter core, braise whole or sliced, stuff and bake with cheese topping. Roots can be dried and roasted as a coffee substitute.
