A tall growing (3m) herbaceous perennial with a yellow daisy-like flower. The tuber is often eaten boiled, baked, or grated raw into salads. The plant is also useful as a summer windbreak for vegetable gardens and as animal forage.
Tolerant to most soils, but prefers a light, sandy though fertile soil. Plant in spring. Persistent in the soil in Perth, any tubers remaining in the ground will reshoot and do not need to be replanted. Tubers can be harvested 4-6 weeks after flowering. Pinch flower buds off as they appear to improve yields. Fertilise with a high potassium fertiliser, avoid products high in nitrogen or the tops will grow at expense of the roots.
