A root vegetable similar to a parsnip with black skin and white flesh. It has a long thin black tapered root. The flavour is similar to asparagus and oysters.
Position: Full sun in sandy well drained soil.
Uses: Young shoots, flower bubs and roots are edible. Baked, fried or steamed, perfect in soups, stews or as a side dish.
